Professor Cristóbal N. Aguilar is a Full Professor and the Head of the Bioprocesses and Bioproducts Research Group at the School of Chemistry, Universidad Autónoma de Coahuila (UAdeC), Mexico. He has served as the Director of Research and Postgraduate Programs since 2018 and was the Dean from 2014 to 2018. A level III member of the Mexican System of Researchers and a regular member of the Mexican Academy of Science, he is also part of the Central Council of the International Bioprocessing Association. His research spans food science, biochemistry, and fermentation, with a focus on Aspergillus niger. Professor Aguilar explores bioactive products, microbial metabolites, and agroindustrial waste valorisation, integrating various disciplines to advance the fields of food science, pharmaceutical chemistry, and biotechnology.
